Great start to the week!  Strong turnout yesterday on some challenging workouts. 

As our Paleo Challenge wraps up this week, here’s another recipe courtesy of my Mom.  Thanks.

Paleo Chili

Ingredients:

1 lb. of ground turkey

1 lb. of lean ground beef

1½ cups of diced onion (1 whole large onion)

1½ cups diced celery (about 4-5 stalks)

1 cup diced red bell pepper (about 1 large bell pepper)

(I sometimes add shredded carrots also…you can add whatever vegetables you prefer.)

3 cups of freshly diced tomatoes

2 cloves of mashed garlic

2 tsp. of sea salt (or to taste)

2 tsp. of black pepper

2 tsp. ground cumin

2 tsp. dried oregano

3-5 T. of red chili powder (start with 3 T. and add to your personal “heat” factor).

 In a large skillet heat 2-3 T. olive oil with mashed garlic, add diced vegetables and ground meats—mix ingredients breaking up the meats.  Season mixture with salt and pepper and other seasonings.  Simmer 20 minutes on low.  Add tomatoes and chili powder.  Simmer on low for additional 1-2 hours until chili is fully steeped.  (After you add the tomatoes and chili powder, the mixture can be placed in a crock pot to steep on low.)
